SugarRoti has created a delicious Vegetable Indian curry recipe that you’ll want to make again and again. It offers a modern take on a timeless favorite curry that’s full of flavor, spice and aromatic ground and whole spices.

Ingredients needed for our Vegetable Indian Curry recipe:

  • 1 Vegetable Nu Spice package
  • 3 tbsp of olive oil or ghee (clarified butter)
  • 2 large potatoes, skin on, cut into 1-inch cubes
  • 2 medium yellow onions cut into 1-inch cubes
  • 2 medium coarsely chopped tomatoes
  • 2 cups of water

Optional ingredients needed for our vegetable Indian curry recipe:

  • 1 medium finely chopped serrano chili
  • ¼ cup of finely chopped cilantro

Cooking directions for our vegetable Indian curry recipe:

  • Heat oil over a large saucepan with medium heat
  • Add Vegetable Nu Spice and sauté for 1-2 minutes
  • Add potatoes and onions sauté. Add tomatoes, stir and sauté for 5-8 minutes
  • Add water then simmer until tender for 15-30 minutes
  • Remove large spices. Garnish with cilantro before serving.
