Ingredients needed for this Tofu & Eggplant Indian Curry Recipe:

  • 1 package SugarRoti Tofu Nu Spice blend
  • 3 tbsp of olive oil or ghee (clarified butter)
  • 1 medium finely chopped tomato
  • 1 medium eggplant cut into ½ cubes
  • 1 cup of water

Optional ingredients for this Tofu & Eggplant Indian Curry Recipe:

  • 1 medium finely chopped serrano chili
  • Sour cream or yogurt (or vegan alternative)
  • ½ cup of cilantro finely chopped

Cooking directions for this Tofu & Eggplant Indian Curry Recipe:

  • Wrap tofu in paper towel and press it between two plates to remove excess water
  • Heat oil in a saucepan over medium heat
  • Add SugarRoti Tofu Nu Spice blend and sauté for 1-2 minutes
  • Add tomatoes and serrano, sauté and stir in eggplants, tofu and sauté for 4-6 minutes
  • Add water and simmer covered for 10-15 minutes
  • Remove large spices. Stir in cream or yogurt and garnish with cilantro before serving
