Ingredients needed:

  • 1 package SugarRoti Pork Nu Spice blend
  • 1 tbsp of olive or ghee (clarified butter)
  • 1 medium finely chopped yellow onion
  • 1 medium root vegetable cut into ½ cubes
  • 2 bunches of chopped spinach
  • 1 can of drained garbanzo beans
  • 1 lb of pork cut into 1-inch cubes
  • 5 cups of water or broth
  • 2 tbsp lemon juice

Optional ingredients for this authentic curry recipe:

  • 1 medium serrano chili, finely chopped
  • Sour cream or yogurt (or vegan alternative)
  • ¼ cup of cilantro

Cooking directions for this Indian spice curry recipe:

  • Heat oil in a large saucepan over medium heat
  • Add SugarRoti Nu Spice package and sauté for 1-2 minutes
  • Add onions and serrano and sauté for 4-5 minutes
  • Add root vegetables, spinach, garbanzo beans and pork and sauté. Add water, cover the pan and simmer for 25-40 minutes
  • Remove large spices, and stir in sour cream or yogurt
  • Sprinkle lemon juice, garnish with cilantro and serve
