Looking for an egg-cellent recipe that will transform the humble hard-boiled eggs? Try SugarRoti’s signature egg & pea curry meal. This simple recipe includes the finest gourmet seasoning and Indian spices that will make this your new favorite meal.

Ingredients needed for this recipe:

  • 1 package SugarRoti Egg Nu Spice - Egg Curry Indian Spices
  • 4 hard-boiled eggs cut into quarters
  • 3 tbsp of olive oil or ghee (clarified butter)
  • 1 medium finely chopped yellow onion
  • 1 medium finely chopped tomato
  • 1 cup of water
  • 2 cups of fresh or frozen peas

Optional Ingrediants:

  • 1 medium finely chopped serrano chili
  • ¼ cup of cilantro
  • Sour cream or yogurt (or vegan alternative)

Cooking directions for Egg Curry Indian Spices:

  • Heat oil in a saucepan over medium heat
  • Add SugarRoti Egg Nu Spice and sauté for 1-2 minutes
  • Add onions & serrano (optional), sauté for 4-5 minutes
  • Add tomatoes & water, sauté for 5-10 minutes
  • Remove large spices. Stir in sour cream or yogurt and garnish with cilantro before serving
