Jalfrezi a.k.a "hot fry", is a stir-fried curry dish originating from the Northeast region of India. Community member, @Spicelikesugar, created this flavor-packed dish using a colorful assortment of vegetables but it's also delicious with paneer, meat, fish, or tofu. Its thick spicy gravy is perfect for dipping roti, naan, rice, or bread. Get creative and make a crunchy cheesy Jalfrezi panini by adding some salty shredded cheese to the perfectly pressed sandwich. The possibilities are endless.

Ingredients
1 large or 2 small tomatoes
1 large onion
1 bell pepper
2 tablespoons oil or ghee
1 SugarRoti Vegetable Nu Spice Package
2 green onions, chopped
1 inch ginger, grated
1 8oz can tomato sauce
1 cup mixed vegetables (carrots, green beans, peas), can be frozen, washed and set aside
1 cup cauliflower florets, roughly chopped
2 cups water
medium serrano chili, finely chopped (remove the seeds for a milder spice)
¼ cup fresh cilantro, finely chopped

Directions
Grill/roast on open flame or a pan the whole bell pepper, onion, and tomatoes. Let them cool, remove skin and roughly chop separately. Add chop tomatoes and onion to a blender, with little water if needed and blend to a thick purée (10 min).
Heat oil in a large saucepan over medium heat. Add SugarRoti Vegetable Nu Spice package and sauté until spices are sizzling and fragrant (1-2 min).
Add the green onion, garlic, serrano, and sauté (1 min).
Add tomato-onion mixture and roasted bell, mix and cook. Then add mixed vegetables, cauliflower, and sauté until tender. Add tomato paste, water and cook (10-15 min).
Remove chili pepper. Garnish with cilantro before serving. Serve
