Chai Nu Spice

Morning coffee and a warm SugarRoti Chai Muffin – it’s already a good day with these American Muffins with a touch of India. Spices are not just for dinner anymore!

  • 1 SugarRoti Chai Nu Spice Package
  • 2 cups water
  • 1/2 cup butter (room temperature)
  • 3/4 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
Crumble Topping
  • 1/2 cup packed brown sugar
  • 3 tablespoons butter (keep chilled so easy to chop into small pieces and mix into the crumble)
  • 1/2 cup pecans, finely chopped (optional)
  • 1/2 cup apple, finely chopped (optional

Preparation

Preheat Oven to 375ºF and lightly grease a standard muffin pan or line with paper muffin cups.
  1. In a medium pot bring water and SugarRoti Chai Nu Spice package to a boil. Turn off heat and let tea steep of 15 minutes. Pour through a fine mesh strainer into a small bowl and set aside to cool (15 min).
  2. Meanwhile, in a large mixing bowl, cream together the butter, vanilla and sugars until smooth (5 min).
  3. Add eggs one at a time, mix to combine (5 min).
  4. Mix together flour, baking powder and baking soda and SugarRoti Chai Tea; combine until smooth batter (5 min).
  5.  Prepare the crumble topping, chopping the chilled butter into small pieces and mixing all together with a fork (5 min).
  6. Pour the batter into prepared muffin pan and sprinkle with crumble (we like to sprinkle a little in the bottom of each muffin to spread the goodness). Bake until pale golden-brown (12-15 min).
Remove from muffin tray to cool and enjoy.
