Paneer Masala Pie Recipe
3 tablespoons olive oil or ghee (clarified butter)
1 medium onion, chopped (approx 2 cups)
3 medium tomatoes, chopped (approx 2 cups)
2 cups of spinach
1 lb paneer, cubed
1 14 oz coconut milk
2 pre-made pie crust
1 medium serrano chili, finely chopped (remove seeds for a milder spice)
1 cup peas
¼ cup fresh cilantro, chopped
Heat oil in a large saucepan over medium heat. Add SugarRoti Lamb Nu Spice package and sauté until spices are sizzling and fragrant (1-2 min).
Add onion, serrano and sauté (3 min).
Mix tomatoes and saute for a few minutes, mix in spinach. Add paneer and mix in coconut milk. Remove whole spices, add cilantro and set mixture aside (10 min).
Place the bottom crust into a 9 inch pan. Fill with paneer mixture and cover with top crust, pressing the edges together to seal. Cut 4 silts in top crust and bake (35 min).
